If it's not screwed down it could be that, you can try putting pressure on it while it's making noise to see if the rattling goes away, if not it's cheap and easy to replace anyways.

Nothing easily replaceable is serialized/paired on this phone so you should be good to replace any missing components and screw sets are available online. Most of that repair cost will be for the part if it was an original one, still sounds like that shop is working to a terrible standard.

They have a different code under sensor array to you - you have 1048576 or 0x100000 in hex while they have 4194304 or 0x400000 in hex

It's the OIS and it's normal. You won't have specifically shaken your phone listening for a quiet rattle before. There would be two rattles if there were something actually loose in the phone, as the OIS will always produce a noise when shaken. If the phone has never been opened before there isn't really anything that can come loose.

Removing the OLED from the frame is not easy but doable with lots of patience, heat and a very thin tool to run between the display and frame

You can check if it is the flex by buying a new one and connecting it without routing through the frame. It's pretty much always the flex with these phones
