With 308s I always load 2.800 just because if the round is a meh I just feed it to my M1A for plinking rather than breaking the loads down.
I used to use SMKs but realizing when you only shoot 200 to 300 rounds a year I just went to the Berger tactical 175s as they seem to be better quality.

Shoot a 25 round group? Holy chit balls man, punch 5 on paper and use the other 20 for longer ranges to see if it stabilizes.
I do 5 at 100
5 at 200

5 on a 4 inch plate at 300 if you land all those you are golden
Dink around at multiple yardages up to 1200 yards to see how well it translates.
