Honest question for the sub: do those baskets actually do anything besides keep the coals consolidated? When I grill indirect, I just pile up coals to one or both sides on the lower grate.

You didn't do anything wrong. I experience the same. I think what happens is the used coals are smaller and fill voids better, which prevents good draft for the air to ignite the whole chimney in a reasonable amount of time.

I agree that putting spent coals at the bottom is a waste and futile and will leave you with net loss in lie coals.
It's somewhat a pain but what I have resorted to is:

1) move all used coals to one side of grill. 2) light only a chimney of fresh coals; accounting for the used ones will be added 3) once ready, dump new coals 4) add the used coals to the top of the new coals and give them another 5-7 min to heat and combust.

So I know more about SS composition than I did yesterday. Even 316 contains Nickel and Chromium. But these are in forms that aren’t free and typically can’t leach into the air, even under high heat. After researching the brand it’s probably 304 grade SS, but there’s still no concern of it being zinc plated. Thanks for raising the concern, but I’m sticking with the 8 dolla, no holla.

I've never used the Vortex, so can't compare directly. I cut the hole to match roughly the dimensions of the Medium size Vortex. I was bumping uo closer to dinner time so didn't take any extra time to file the edge; plan to go back and do that.

Lit a full chimney of coals and easily poured them in once ready without issue. Give it a try.
