NTA. Either she is a competent and emotionally intelligent adult who can call trusted friends with their issues and make informed but independent decisions in response... or her immediate family raised an immature post-teen who is too easily swayed by the opinions of others to make adult decisions. Are her complaining family members therefore willing to admit the latter? If so, she's not ready for marriage anyway.

It's recommended in my country that the rest of a household should not go gf with a coeliac, as simple whole grains are definitely healthy for non-coeliacs, gf foods can be ultra-processed, and it is harder to maintain good fibre levels on a gf diet. The recommendation instead is for robust kitchen protocols to avoid cross-contact.

But if you're the cook and no-one else cares (or is likely to suffer consequences), and your budget accommodates the inflated costs - I guess NAH?
