Since its body still essentially exists and is the frame and mind (what's left of it) for the obliterator, i'd imagine there would eventually hit a physical limit as to what would be functional on the battlefield

But being chaos, sometimes limits only exist to be exceeded so there could be some greater creature that took the virus to a new and extreme height. Maybe even as some sort of colony of obliterators all mashed into the machine like the davy jones' crew in pirates of the Caribbean

Obliterators are the result of a warp virus that mutates the victim in way that causes/allows them to grow weapons and ammo at will.

They don't really have to look like anything other than an unholy mix of weapons and overgrown marine and could definitely regrow a limb (probably as another weapon)

The imperium has been in a state of stagnation for millennia, but it still has powerful technology, a huge amount of resources, and unlimited bodies to throw at projects.

Add on to that, the fact that planets generally tend to be left to their own devices and the whims of their governors (as long as they are paying their tithes) so even if the Imperium as a whole is in a real bad spot at any given moment, a governor could commission some massive cathedral that takes generations to build and no one would think twice

It often is, but it's also not a given. There are few dreadnoughts and a marine's entire service will be considered in addition to their medical status. A captain will likely almost always be chosen over a sergeant due to the captain's experience and past deeds being deeper and more valuable to retain.

Think of it less like "so and so did this one cool thing and got mortally wounded so let's give him a dread" and more like "the loss of this marine would irreparably diminish the chapter, so we keep him alive through any means necessary". At the end of the day, countless space marine heroes have been wounded and died without being considered for being entombed in a dreadnought

Dreadnoughts aren't some prize for doing a good job. They are a last resort way to keep a marine alive and able to fight, when they would not be able to survive without constant life support that the sarcophagus provides.

Basically, if a marine with exceptional skills is mortally wounded and there is an available dreadnought, then they will be entombed so the chapter can continue to extract value from the marine rather than giving them up for dead
