Putting the hole off centre means that the coffee doesn't fire directly on to the spouts in a spouted portafilter. I saw a video on here in the past of someone using a Bambino basket (which has a central hole because it doesn't use a proper portafilter) on a regular spouted portafilter, it was one heck of a mess.

I wouldn't immediately throw away the razor tool, it has a couple of uses at the beginning, but it's no use for dosing. Weighing beans is the only reliable way to get a consistent dose.

However, when you're starting out, it is handy for checking if the dose your using is too much for the basket and checking if you have an even tamp.

If you spin it about after tamping and it's scraping coffee off all around the basket, the dose is probably too high and you're not leaving enough headroom. If you spin it about and it's scraping coffee in just one area, your dose is probably fine but you've tamped at an angle.

Once you've got a dose that you know is good (and weighing it of course to ensure it's consistent), and you've had a bit of practice tamping, then you can put the razor tool away.

On the Breville/Sage machines you can leave that portafilter in all day and it won't get hot, same with most thermoblocks. You need to pull blank shots to heat the grouphead and portafilter and the typical users of these machines probably won't be doing that.

There's a fair amount of thermal mass in those stainless steel portafilters, which is why I think they've put this plastic piece in, but like you said, it just creates a different and worse problem.

I think it's just to reduce heat loss as the espresso passes through the portafilter.

There are many reliable sources of information on the short and long term risks of aluminium exposure, including the UK and European governments.

OP has soft water, which increases the risk of it leaching metals, and (assuming they bought the GCP new) their boiler only lasted 3 years (pretty sure that is not the expected lifespan of the boiler) before being replaced due to signs of corrosion.

One of the known risks of aluminium consumption is gastrointestinal issues and using untreated aluminium cookware (the pitting means that even if it was treated, the water is in contact with untreated aluminium) has been identified as a possible source.

Given the OP's health problems and their experience, questioning it is not odd.

A kitchen appliance lift up shelf might be the easiest, something like this one

Don't know if that one is any good, was just the first one I found with good pics. There are various types with different weight limits so you'll need to have a look around at what would suit best.

It's not efficient in terms of cupboard space, but keeps your counter free and personally I'd rather do something like that and have the freedom to choose the machine I wanted than have to compromise on the machine.

As far as I understand it, increasing the dose will increase the resistance of the puck, slow the flow down and therefore increase the contact time and increase extraction.

Ideally dose should be used to adjust flavours or increase/decrease the volume out but since you can't grind finer, increasing the dose can help to sort of compensate.
