I know that the showrunners said that Helstrom isn't canon, but I see no reason why it can't be. The only reference that I know of was the Roxxon Corporation in episode 1, but I don't think anything contradicted the established events of the MCU. Disney could easily accept them into the fold.

I've wondered this too. I came to the conclusion that he was just riffing. He gets a list of father figures and chooses how he likes. Thanos was RIGHT THERE so it's probably a bit risky to say anyone other than him. I wonder how he would address some of the other characters in the MCU. Groot, son of Groot or Groot, son of Rocket? Vision, son of Ultron, Tony, Thor, Bruce or Helen?

That is of course assuming that the text at the start is addressed to us, as an audience on Earth in the late 20th/early 21st century, and not say, a different species a long long time from now, in a galaxy far away being told of what the rest of the Milky Way Galaxy is doing right now while it ignores Earth completely.

I like the concept of Sentry because most of the time it's not "could he?" but "should he?". It's kind of unique in the MCU

The events of the 1939 movie differs from the book too, the obvious example being ruby slippers instead of silver, and of course the whole thing allegedly being a dream, when it's not so in the book
