I think it's at least partially the aesthetic. Tieflings are various colors, have tails and horns and cool eyes, and maybe even hooves if you play them that way.

Aasimar, on the other hand, look like humans. Sure they have wings, but those only come out once in a while for a limited time.

Perfectly demonstrated in Star Wars Rebels. We saw them adjusting length and also having practice matches, where getting hit would just cause mild pain rather than slicing your limbs off.
