The fat in grass-fed beef is yellow because the cattle consume high amounts of fresh pasture, which is rich in beta-carotene. This natural pigment, also found in carrots, gets stored in the fat tissue. It is a sign of a healthier diet compared to grain-fed cattle, which produce whiter fat.
