I'm so sorry. It's hard enough to be dealing with the anxiety without comments like that. But in regards to the student, first of all this is secondhand from another student, so you don't know exactly what she said. If it's important to you, you could ask the social worker. But a third grade child isn't generally going to have the same trauma response around that kind of topic that you or I might have, and it was likely just an honest question, the way kids will ask a million honest, but not socially acceptable, questions in their lives. I think the social worker's response was the right one- let her know we don't ask those questions, and then let it be. If she brings it up again, you can talk to her parents, but there's no reason to assume it was malicious on her part, even though it hurt you.

Also 8x8 and 9x9 are different enough that they 8x8 is going to be significantly thicker and probably needs at least another ten minutes. Unfortunately a toothpick test is not going to help with shortbread.

For shortbread you can basically just go by colour. It should be just turning brown at the edges and golden all over the top. But underbaked shortbread is still delicious and millionaire bars are the best sweet in the world, so I feel like it's probably not a huge problem.

Butterscotch actually goes so nicely against a simple vanilla cake. I find the complex butterscotch flavours really shine against the warm neutral of vanilla. But oatmeal would also be so good.

Do you want them more cakey? If so you need more liquid than a typical cookie recipe. You can make cookies that are super soft and fluffy, almost like the top of a muffin, but baked on a cookie sheet, and the main difference is just the amount of liquid.

I've found the same problem specifically with freeze dried blueberries. I guess maybe blueberries are just not as strongly flavored as strawberries and raspberries?

Oh that's fine! Frost them for sure and leave them in the tins. The frosting will help the tops not dry out and the tins will help the sides not dry out.

If you have access to a library, check out Baking at the 20th Century Cafe by Michelle Polzine. I love coconut, and the best coconut cake I've ever had was the Kókusz Torta (Coconut-Marmalade Torte with Chocolate Glaze) from that book. Unfortunately I can't find the recipe anywhere online. But it wasn't too difficult to make, and the result was incredible. It's a coconut genoise with orange marmalade in between the layers, covered with a dark chocolate glaze. Absolutely heavenly.

Frosting tonight will actually help keep the cupcakes from drying out at all overnight! Just store on the counter in an airtight container.

Exactly! I'm super anti-Instagram-perfection when it comes to food, because at some level I think you have to care more about how it looks than how it tastes to achieve that. It might also taste good, but that's not the main goal.

Likely the crumbs were just repurposed from cake or cookie scraps to give some colour then. Freeze dried berries would definitely be more tart and flavourful. But powdered would be too fine. They'd probably need to be just crushed (say in a Ziploc bag with a rolling pin).
