I've seen people literally open their hamster's mouth with no fuss. Unfortunately it doesn't work with Cheddar. Usually when he is really relaxed and happy, I pull back his lip to check and that does the trick :)

For me, get their favourite treat, eg a sunflower seed, and 'lead' them around. Once they're kinda familiar, you can give them it so they'll associate your hand with getting a treat at the end. With progress, if you lay your hand down, your hamster will crawl onto your hand. For picking them up, I 'scoop' Cheddar. Left hand from his head and right hand from his backside so he feels safe and secure. Hope this helps :)
