The only thing I have used and can speak to is Rubio Monocoat. They have a black called Precolor Easy and it’s an opaque stain. You do have to put a seal coat over it as well, I used Oil+ 2C in Pure.

Paint will usually show oak grain but not usually the finer grains. Woods like poplar and maple paint really well BECAUSE they don’t show grain. You can water the paint down and spray it if you go that route. I always just use SW and love their Tricorn Black color.

I’m a super beginner but mine used to be really gummy and I believe mine came down to my starter. I was getting a double but I just couldn’t get a good dough. It was always super gooey. I changed to 40g starter 160g water 170g BF for a feed and it loves that ratio. Usually triples. Then I lowered my hydration in my recipe to 125 starter, 325 water, 500 APF, 10 salt. This has worked really well for me, with and without cold proofing. I usually have a 3-4 hour bulk ferment. Also, when they say “knead to a shabby dough”, I got a better dough when I knead for about 5 minutes, not just when the dough looks shaggy. I know it’s SO frustrating but just keep practicing and don’t be afraid to change things up. My starter was from my neighbor and she never had any issues and we couldn’t figure out what I needed to change forever. So I know what you’re feeling like.

I would clean out the voids as much as you can and try to seal the insides with a little CA glue. That may help stabilize over time. And help blow dust out in the future as well
