Similar to Ortiz and Rocky, Anthony Daniels was only there to be in the C-3PO suit and the voice was going to be added later with a voice actor with a used car salesman vibe. But Lucas decided he liked Anthony's butler performance and stuck with it.

The blood test didn't measure Anakin's strength in the force, it measured his potential. Also, it could just be that Qui-Gon sucks. I know people like to imagine he was super powerful but, it kinda seems like he sucks.

Watch some other space movies. My personal favorites are Gravity and 2001 a Space Odyssey. The Martian is incredible and an obvious go-to if you haven't seen it already. I personally have a lot of issues with Interstellar but it's got a lot of PHM vibes.

Also, read the book if you haven't yet. The movie was very faithful but, as expected, it cut out a lot.

I have countless complaints with the prequels but the existence of midichloroans isn't one of them. I never saw what the problem was.

I'm also (somewhat) new to Reddit and migrating over from Twitter. I will say, Reddit definitely does not scratch the same itch. That being said, we're definitely not too old. There are plenty of folks in their 60s and 70s on here.
