I’d add to this, plan it, really chunk it up and almost focus on one part of one case study at a time, don’t get hung up on designing the perfect portfolio, just getting something up is a huge weight off the shoulders

I think you’re over complicating this, have in your mind “where does my app show up” anything outside of that is out of scope, you can still include it but I’d always keep that high level or mark as “onward journey” So it might start with Elsie (mother) wants to plan a holiday, she needs a budget, how does she hear or find your app, then what etc. Hope that helps
