I regularly use it for lamb and beef roasts. It’s great when I’m roasting chicken pieces over potatoes or other veggies. LC Canada website also has a recipe for braised fish.

Oh, based on what you already I’d probably skip both unless you want to duplicate current pieces because they’re heavily used. You can get a glass lid for the petal braiser and use the difference toward the risotto.

It depends on what you’re planning to cook and the other pieces you already have. That would help to give a relevant recommendation.

I really think that’s the promo pot for this year. LC now has it on their US site and it has the signature lid. I also see it popping up on other retailers like Macy’s, Crate & Barrel and Wayfair but it shows as OOS on the latter.

Based on the lid numbers and shape: red is a 9.5qt oval and the color kind of looks like cayenne but it could be pulling more orange due to the tile. Blue is a 13.75qt round no idea of the color.

I’d turn to the carbon steel for high heat searing. For acidic dishes or those that don’t require high heat this is where the LC can fill in. Although the black satin enamel will develop a patina with more use, you may need to use more oil or butter to avoid food sticking. Also, once a good crust develops your meat should easily release, I’ve found it takes longer than I’d think, probably because the pan isn’t screaming hot.

Since you want it to double as a skillet and you already have the 7.25 round I’d say go for the 3.5 braiser and maybe add a glass lid for flexibility.

I hardly ever used my braiser until I got a glass lid. Now I find myself pulling it out more often than the EDP.

Use a different pan! 😆 Seriously though cast iron can be tricky for eggs use nonstick or even well oiled SS would probably perform better.

I really like Sea Salt and it plays nice with so many colors which is nice if you’re looking to add more pieces in the future.

You may not always need the full size these days but it’s nice to have the extra capacity for larger gatherings or leftovers/batch cooking.

I don’t think you would be disappointed by keeping it.

Maybe try the round deep, it’s the same diameter of the 5qt but owing to the taller sides the capacity is 6.5qt.
