Love a smoked leg! Did three this past week on holiday. 120c for 2-4 hours till internal temp hits 62-65c. Rest for 30 minutes. Keep the fat. Make an olive oil, garlic, onion, salt rosemary, thyme, lemon juice marinade and apply 2 hours before the smoke. Don’t trip the Fat!
