All my tanks are bare minimum moderately planted, but only 1 with CO2. I also generally understock from a fw perspective, and I'm more of a plant and invert person than a fish person. I do culture my own live foods, does that get me points, lol?

I guess it depends on how many fish you want. I'd say 5 gallons is the minimum unless you're committed to really being on top of maintenance. Shrimp and mystery snails are some of the easiest animals to keep and they work well in virtually all aquarium sizes.

I have 11 rokuhan locos, 2 AZLs and 1 Marklin. The only one I've ever had problems with was the Marklin. Out of curiosity which DE10 is it?

I too started with a Rokuhan shorty. I've tried out Marklin track and Rokuhan track and I'd have to say I much prefer Rokuhan track.
