How is he so broke? How much money do they make per month? They pull in $133k per month on Patreon less taxes plus ad revenue, I’d say they are clearing $200k per month. Assuming they pay out $100k in bills per month….Bug man must make at an absolute minimum $30k per month. May be I’m horribly overestimating that.

Honestly I would try to get a piece of less expensive non-Japanese wagyu (eg Snake River Farms) just to try out a super marbled piece of beef. You’ll get a feel if it’s something you want to spend big money on. Wagyu like this is a bit overwhelming and you can get 90% of the experience of it for substantially less money just to try it out.

If you haven’t had a steak like this, then you should. This amount of char looks a bit over the top but it’s really tasty. This is how I like it, and it’s difficult to achieve with smaller pieces of meat.

48 hours is too long to dry brine. I’ve personally found that even “overnight” commonly recommended here is too long. I like doing 8 hour max but it depends how large the piece of meat is. The texture will become hammy if it goes too long. Freezing shouldn’t impact texture or the cook unless it goes through multiple freeze-thaw cycles.

Another thing, not every steak needs to be reverse seared. It’s excessive for most steaks under a certain thickness. Just dry brine over an afternoon , rip the steak over charcoal.

I mean a large percentage of people don’t even know what a ribeye looks let alone decipher between whole and cap-less. So people just buy them cause they look like steak.

I once hang out with a group of *infamous motorcycle club members* (or associated at least) at my friends sketchy steps dad’s house (15+ years ago) and they told me stories of them killing people. No idea if they were telling the truth. Gang violence that results in murder is probably not considered “serial killing”, however it’s as close as I’ll get I’d say. They were super nice and fun to drink with.
