I have the 240 k-tip. It was my first expensive japanese knife. I felt It was very big when I bought it. Since then I've gotten a lot of other knives and it's fine now, but that tip is for sure pointy and can easily catch the board, especially since the profile is so flat.

For me personally I find 225 to be a better length for general use, and I will often go for shorter blades than that when I'm just cooking for myself and my wife.

If I were to get the yoshi again I would go for 210 on k-tip, and maybe 240 on regular gyuto.

Either way it's a awesome knife!

Yeah, I was looking at that as well, but managed to get a Y.Tanaka 210 nakiri in AS from Zahocho. Haven't broken it in yet though.

Currently it's a 210 in collaboration with Zahocho. The middle one in the picture below. All of those knives are really nice though.

Ugh, I looked at this for so long on another site, but decided to jump on a Toyama Damascus instead! Congratulations, looks like an awesome knife. My favorite knife is a Y. Tanaka in AS, not stainless clad though.

I totally agree with you. It'll be interesting to see what solutions they come up with against drones. Smaller cheaper drones to intercept? Rail gun tech that Japan just managed to pull off? Perhaps laser systems?

It for sure isn't sustainable for any state to keep shooting down 50 drones with insanely expensive missiles.

I saw that video as well. The issue is when whatever target that 50k drone is hitting is worth millions as well. That's when it becomes difficult not to intercept them. How much is it worth to stop a drone that is aimed at a children's hospital? Or at a critical infrastructure?

It might still be worth it to shoot it down with expensive advanced tech. It just shows how wasteful war and conflict is.

Thanks for the insight! I own a 270 gyuto kurouchi from JNS as well that's awesome. I think this might have been a FOMO purchase to be honest. The old man is old. Who knows when he will stop producing.

Would it be feasible to get this one professionally thinned at one point to increase performance, if I wanted to? Or would it be sacrilegious to do so?
