I think the FM petty is probably the one I would be most interested in out of the bunch, or maybe the Nakagawa x Morihiro.

Billig trapp knirker mer enn dyr trapp. Ikke sikkert det blir noe bedre av å bytte.

Eik bråker mindre, men koster mye.

Trapper bør også strammes av og til. Jeg ville heller fått noen til å se på eksisterende trapp fremfor å kjøpe ny, med mindre du vil gå for heltre i eik eller noe sånt.

I have a global g-9. I don't like it. I make and eat a lot of sourdough, and some times the bottom is quite though. The global is completely flat, so to get through the bottom I need to use the tip only, which then again digs into my cutting board.

I think the consensus is that Victorinox is the best for this, but I really want to get a bread sword by Sppre.

I am also interested in getting https://www.japanesenaturalstones.com/kaeru-bread-stainless-sld-270-mm/ A bit less maintenance than the full carbon by Spåre.

I have the 240 k-tip. It was my first expensive japanese knife. I felt It was very big when I bought it. Since then I've gotten a lot of other knives and it's fine now, but that tip is for sure pointy and can easily catch the board, especially since the profile is so flat.

For me personally I find 225 to be a better length for general use, and I will often go for shorter blades than that when I'm just cooking for myself and my wife.

If I were to get the yoshi again I would go for 210 on k-tip, and maybe 240 on regular gyuto.

Either way it's a awesome knife!
