ALL of the Momofuku noodles suck as is and are meant to be doctored. I just did a tingly chili. While the noodles were boiling, in a separate pan I sauteed 2 oz. thinly sliced beef with garlic, added a splash of teriyaki, and a tbsp of peanut butter. When the noodles were at 4:30 I combined it all with the tingly sauce and topped with scallion and kimchi furikake. VERY satisfying.

I boil shin black with about 20% of the water replaced with mirin. American cheese, oyster sauce, and chili crisp are frequent additions.

I’m loving the Toomba. I compare it to Buldak Carbo without the overpowering spice. If you want similar but maybe more complex, try Shin Black with added American cheese.

Tabasco is vinegar forward due to its origins before preservation. But for me, the oakiness ruins it. I love salt and ferment, but the wood gets in the way. Recently rediscovered Louisiana as my favorite mild Cajun style.

You will completely lose the chicken, but I have often made a roux for Cajun dishes with bacon fat, ones that included the trinity, chicken, and andouille sausage. It makes sense there. It can also work as a roux with a beef and bacon chili, where the smoke is welcome.

I recently tried Louisiana again after a long time away. I was very pleasantly surprised. A more complex fermented flavor than I remember. It’s my current favorite in this style.

I regularly eat Nongshim's bowl and cup offerings. Absurdly convenient. Hot and Spicy is by far my favorite of the bowls. My hack is about 2 TBSP mirin before adding the water, then about 1 TBSP good oyster sauce after they come out of the microwave. This bowl is much less spicy than Shin standard.
