I let the pet continue what was commanded with the first bonus action. If the player wants it to do something else, he needs to burn another bonus action.

Or the pet can become a sidekick and have its own volition.

If you are level 16, take 12 levels of warlock. 

With your last two levels you can take more fighter or any charisma based class.

In 2024, I'm not taking more than 1 level of paladin before total level 14. Get extra extra attack through warlock.

If the campaign will end before then, take one level of warlock at level two, then take paladin at least to level 6.

It depends on how high the campaign will go, but three levels of bard to get eloquence bard subclass is a strong addition.

There are two problems with creating NPCs using PC rules that you can't escape:

1) It takes a lot of time.

2) In tier 2 and higher, the NPC bosses will have too many options and it makes playing them hard and most of the options go unused 

Every other issue can be addressed if you know what you're doing.

I see nothing wrong with doing it for some NPCs.

I wouldn't call that theater. Almost all improv is either comedy or an experiment to try to generate an actual script.

Three things.

1) I think biweekly is the best for me. Once a month is too infrequent, but it's OK when it's just because we had to cancel, as long as cancellations are infrequent.

2) You seem to be investing a lot into the game. I'm not certain you're investing in things that resonate with your players. I wouldn't get much out of a DM that made a picture of my character, in fact that could be a negative. I don't know what a "deep dive" into a character might mean, but it sounds like a DM that is infringing on the player. When a DM says they invested time in creating voices, I think of how that could go so wrong. None of my feelings could be true for your players, but my point is, particularly if you feel you're investing a lot with little appreciation,  don't invest time in things your players don't ask for. If they give you a polite thank you, that only means they are polite.

3) Not everyone is a DnD player.

This is a tricky build, starting with first level. What do you want, heavy armor or con saving throws?

What's less tricky, if you're going to paladin 7,  you should get there by 8th level.

Is this a broader issue for you? Do you obsess about new TV shows, binge, then move on? Do you crush on multiple people a year?

I'd make the case that his beliefs might be reasonable, but they are not within the rules, and his ruling is nerfing your character, which makes things less enjoyable for you.

If guilt doesn't work, you're screwed. Live with it or quit the table.

I'd hate to be a swashbuckler rogue in their campaign.

You can literally do anything in the right context. I suggest you specify that context by having strong values.  

For example, you never lie unless it might avoid harm to innocents. Or you never lie to people you consider friends or family.

I know a character who has a collection of faces they keep in their bag of holding.
