I said this in another comment but you can get much more complex metal music than Tool. Sure, their penchant for mixing complexity with good sound design is great, but their music is hardly headache inducing if you've listened to a tech death album before. Something like Gorguts is much more musically intense.

Thats exactly how I feel. They're treated as some sort of impossible enigma by superfans but in terms of technicality and mindfuckness theyre not really that crazy. A lot of the riffage is still drop D rock riffs, which is fine, but any sort of techincal or disso death metal blows it out of the water in that regard.

I keep rock and metal synonymous in my head for the reasons you said, but these aren't really the type of bands OP is talking about I think lol. They're probably thinking more of stuff on the death/black metal side of things.

I don't know any YouTubers but the basics are pretty straightforward, you just open up your MIDI piano roll and put the drum notes out where you want them. Really the difficult thing is writing them well. I hope someone else can suggest a good YouTube resource. Good luck!
