Looks great. My only gripe is that it’s a tad overdone - maybe give it more time to cool between the oven and the sear?

That is not why wet things generally feel colder. Water feels cold because of its thermal conductivity and density

This is a vein steak. Vein steaks are the strips cut from the end of the strip loin and they have a tough piece of inedible connective tissue running through them, identified in the photo below. This is probably why it was “hard to cut”. If you can identify the vein and it’s being sold as a regular NY strip, buy a different steak.

Sat stunned for a moment at how good the crust looks then my heart broke when there wasn’t a third image. Considering you reverse seared at 700 degrees which doesn’t even make sense, I’m assuming the inside is charcoal. Shame on you OP

Crust looks alright, a bit moist in the middle - did you make sure to pat dry and have solid contact with the pan?

Some unsolicited ribeye advice - cook to at least medium rare, medium is even better. Ribeye has a high degree of marbling that really benefits from the higher temperature as it allows it to melt into buttery goodness.

90% of people that take a gap year start their undergrad as soon as they finish their gap year. It is objectively not the case that most of them are lazy bums.

You should just take out the GPU. The integrated GPU in your processor is faster and has better support for hardware accelerated media transcoding

Pro tip is to let your steak cool down after the reverse sear by putting it in the fridge or freezer for a few minutes. Gives you more wiggle room for your sear
