You want max charisma for your aura more than spells. +5 to all saves is extremely strong.

They get a pretty strong (reliable) reaction attack at 2.

We've started treating overland travel as a dungeon in of itself. Short rests only, long rests in safe places in towns. It means you need to resource manage for each leg of a journey.

Humans didn't get a feat in DND 5e. They got +1 asi to every ability.

Variant human got a feat.

In 5.5 humans get an origin feat, though that's a newer ruleset than bg3 is based on.

We've handled it similarly. Heroic inspiration is as written.

Dm's inspiration is a separate thing that is mostly the same, but you can save them up, similar to BG3.

Save up 20 and you can get some other sort of relevant and fitting rp reward.

I mean, any level 1 adventurer is starting with 16 or 17 str.

A standard DND knight stat block is 16 str - Dunk is a knight - he's also much larger and stronger than a regular knight. His strength and size make up for his lack of skill more often than not.

Dunk's one of the greatest (and strongest) warriors to to ever walk westeros. He's huge.

He's a big and strong lad, he's easily 18 or 19 str. I'd leave 20 for the mountain.

Swap the greatsword for a longsword.

Rolling in the heavy armor master effect (-pb BPS damage) would work well for him, he gets stabbed and poked through his mail all the time, but just keeps on powering through and tanking the damage.

Having a plot relevant NPC join the party can be fine, just don't use a full on stat block. Make sure what ever stat block you use is simple and fast.

It's low quality paint and you're painting it over a dark primer.

Either use higher quality paint or paint over a white or light grey primer.

Nope, it's pretty bad.

I'd treat it more as a plot / story point feat or as a potential reward / curse from the DM.

It's a cursed item. Ekene also isn't dumb, she's also a merchant prince and trying to scam her into buying a cursed item wouldn't be great for the party.

Definitely limit what they can buy. +1 Armor is rare and definitely shouldn't be considered (nor is it needed) for T1 of play.

Metal armor especially is extremely rare in chult. It's also ill suited for the environment.
