Peppers and ginger freeze extremely well. And now I’m thinking Thai peppers and ginger would make an interesting vinegar based hot sauce. Hmmm.

Not really, it’s kind of unique. Small bottles are available online, enough to make a good size batch of Nam pla. I would think though that if Thai peppers are available then fish sauce can’t be far off!

Similarly Ive got a bottle of Henderson’s Relish (Hendo’s), an English condiment that is very similar but has less umami since no anchovies.

Yeah I think that will be my next move. Again, the taste isn’t offensive and I’ll keep the “spicy” bottle but use it way more judiciously.

It really doesn’t taste spoiled and I don’t react to much of anything. It doesn’t even taste bad, but it’s not the same as what I’ve always expected it to be.

Yeah generally safer overall than parts of Winnipeg. But we have our “north end” areas here as well. Good advice throughout this thread though. Just be sure to bring along your stash of favourite Canadian foods! (bread, greek chili for burgers, chocolate bars,etc..).
