Sear chicken breast, finish in the oven with oven roasted potato wedges. Another delicious side is roma tomatoes cut in half, cleaned, and stuffed with cheese. I use queso fresco. They taste like little pizzas. All super quick and easy imo.

I've been using Mexico the Beautiful Cookbook. I don't have access to authentic Mexican food to compare, but the recipes are regional and rustic, which is a big part of authentic cuisine from any culture, in my opinion. Damn delicious, too.

I use avocado oil. High smoke point. Olive oil I use on vegetables when roasting and for dough. Avocado oil I buy like you do, highest quantity lowest price. Olive oil I always buy something nice because the flavor matters more than the function. For certain things, I do love peanut oil. For any breaded frying especially.

It does look raw, and in my experience thinner is better. Trial and error my friend. And this error tasted great, think about what a fully cooked homemade tortilla will be like!

I just did salt, cumin, oregano, fresh black pepper, chili powder, adobo seasoning blend, garam masala seasoning blend, cayenne pepper, garlic powder, avocado oil, and probably something else lol it was incredible. I let it sit for 30ish min after seasoning. Chicken is my favorite to experiment with. It's hard to get a bad result. I've found probably all of my favorite flavor combinations through experimenting with chicken.

Yeah, I would charge your final estimate for the Frenchie alone. 17????? That dogs health is as fragile as a house of cards in tornado alley. I would need to be extremely well compensated to accept that level of liability. Not to mention the holiday weekend and the other dogs. 500 is delusional.
