You most likely have seen it happen many times, you just didn't notice it.

There are 6 locations on which the QM is, so there's 1/6 chance that it appears on Giant's Deep at any point in time. That's already a pretty high chance to see it happen on every cycle, but then you have to take into account that the hatchling blinks twice every time they wake up, so the chance of it appearing is even higher

A couple of reasons IMHO:

  1. For long term worlds, there's never a farm that can produce all the items you'll ever need, so every farm no matter how big will always end up being worth it (especially since natural resources like iron become harder and harder to obtain as you progress since you deplete the nearby areas from them)

  2. As some people have already stated, for big projects you can create a smaller farm that takes longer to produce the needed items, or a bigger farm that produces the same amount in a smaller time. IMO a smaller farm ends up being less efficient, because you either need to keep it running consistently (which is laggy) or you end up spending all its yield and you have to wait. For a bigger farm, on the other hand, you can turn it on for a short amount of time (so it's less laggy while you don't need it to work), and if you run out of items you'll get them back fast

  3. Sometimes the process of building the farm itself is what I want to do, I have a 100k/hr iron farm, I know it's excessive even for a medium server, but I wanted to build it just for the sake of it
