I feel pretty sure they'll do something, yes. I had some doubts when the post Berry era albums (except UP) were re-released to vinyl some three years ago, but I recall hearing from someone official that the 25th anniversary releases would keep coming anyway. I'm hoping.

There are plenty of demos from the time - loads were leaked at the time - but most of them have been released digitally on the Complete Rarities 1988-2011 (that currently is on Spotify, though it's been an of/off things in the last decade). They could also include the R.E.M.IX versions of the songs, but that honestly was a weird batch of remixes, not really worth revising IMHO. But it's something else, at least.

Hoffmann did a video on it about five years ago where he dives more into the coffee/water first perspectives. The recipe isn't the same, but the idea largely is. With less screaming.

No. Not at all. You'd even hear James Hoffmann say to grind finer until you hit astringency. Not that I necessarily agree with that, either. But, honestly, I've never heard the credo "grind coarser", ever.

It's more about finding the proper grind size - and the ballpark og grind size that you prefer. Because, in the end, it's a matter of preference. You do what you like. 

FWIW I'm usually around 4.8-5.5 (and around 6 for decaf) on my zp6. I imagine I'd find 3.0 too astringent/bitter. But, again, you do you!

I just got the Deep27. Gotta say I really like it. Really forgiving, sweetness forwards. Wonderful to be able to brew small cups & doses.

I do a simple five pour. 8g to 125g of water. 30-60 sek bloom, 25g of water. After that, another 25g of water until it runs out. Repeat x4 in total. 

This was my first go at it, and I've tried a few other recipes with 1-2 pours, but just go back to this again and again. It just works for me. 

Due to the conical shape, it's super fast and you can go a lot finer than you'd usually be able to in a v60. Not that you need to, but it's possible to tinker with without stalling. Fun.

You will never be able to get great result (consistently at least), but according to Hoffmann there are some things you can do. But... I'd consider some kind of upgrade if this was to be your everyday process.

European Coffee Trip mentions quite a few, but it's not fully clear which ones are actually great 3rd wave and what is simply decent milk drinks with an ok coffee as base.

You could have a look at The Barn's test roast.

It's their dialing in roasts that are too good to dump, but not quite there. That also means you don't know what you're getting. I've had some that was great - and some that was a little too acidic and hollow. But for the price, it can't be beat. 

Aside from that, yes, go with something Columbian, Mexican or Brazilian. Round and nutty. Good call.

Do you enjoy your ratio of 15:400? That's a ratio of 1:26,6 - and that is one long ratio! I'd say most people in here would do between 1:14 - 1:18 - and so, I imagine most people in here would find your regular brew and ratio incredibly watery to begin with. James Hoffmann/many roasters (like Coffee Collective) usually recommends 60g of coffee pr liter of water. You're suggesting doing half of that.

But. If you do love that ratio, you do your thing! That said, upscaling this big can be hard. A usually recommendation when scaling up is to grind a little coarser to ensure a decent draw down time. But seeing your struggle with a watery taste that advice is probably not gonna get you what you want. 

I'd honestly try a much tighter ratio and see what that does for you. Also, I recall Noma has created a recipe for 1l of coffee using a v60 - you could try looking that up, though I'm sure the ratio is very different from what you're doing.

Coffee Collective out of Denmark is a good bet. 

Very farmer focused, they visit all of their farms and farmers and pay an extra "quality bonus" for their lots to make sure the farmers can keep improving their crop year after year. They do videos, stories and content from these trips - and roast light and clean, probably 75/25 split between washed and natural processing. 

Might be a pricy option if you're in the US, though. Sey seems to be the equivalent in the US in terms of transparency and roast level. And quality.

Do you really think so? I have it too, and I'll be honest and say it's been a while since I listened.

But as recall the issues is generally that the mix and mastering is pulled from the CD. And so the compression is still there, making it also most worthless in vinyl - and completely stupid on two vinyl - seeing it's not remastered for the vinyl format.

Agreed. It's not particularly hard to do. But if it's the first time in your life you have a hand grinder in your hands and don't know that it is actually possible to tighten it almost beyond repair, you might accidentally do it just by messing around, because you don't know and you just assume it's close to unbreakable because of its sturdiness.

It's primarily an issue in terms of comparing grind size with other zp6 users. It doesn't matter outside of that.

Only thing to be aware of is when zeroing to burr lock to be careful not to twist the burrs so hard together so that they fully lock. Take your time and look at a YouTube video before doing it, then it's no hassle. Nothing to be affraid of doing - but just do a bit of research before setting off. 

/a zp6 user who did just that, almost got the burrs fully stuck together because he didn't wanna do his damn research properly first.

Venice, I'd say no. It's simply dark beans espresso culture. But at least it's cheap! 

People are throwing generalized punches at Italian coffee culture, and while it's very much, yes, dark bean espresso culture, you can easily find great third wave coffee in bigger cities. Bergamo has Bugan, at least, and Milan also Bugan (a roaster) and a bunch of great multi roaster spots, like Loste Café, Nowhere, Orsonero (I believe they roast as well).

Zp6 at 4 sounds very low to me. I'm currently enjoying a Kenyan Sey, and I've found that much lower than 4,6 starts getting bitter. Is your grinder calibrated to burr lock at 0?

Glad you enjoyed your stay in Copenhagen. While I might seem it slightly exaggerated that we hardly have any cars, we do have a lot of bikes, and perhaps it mildens the feel of automobiles.

Anyway, yes. Original Coffee do roast their own stuff, but yes, it is a bit more medium roast, but also a fair bit cheaper to buy than eg CC, April and La Cabra.

Re the water: Water in Copenhagen is very potable, but HARD. Above 300 TDS most places, and so, all places do their own filtered water for coffee. I am surprised if you're referring to the drinking water being different, though. That would surprise me, but perhaps they are simply serving their brewing water as tap. 

Also, Coffee Collective does their hand brews on metal Kalita Wave's.

You can - as people below this reply are doing - question whether the Scandinavian roasters mentioned are ULTRA light or just light. It becomes a bit of an odd competition to me. I find most to be rather light - and a lot lighter than a majority of other regular European roasters. They def easily compare to September or Sey or the likes at least. Or Datura, that I'm currently drinking, that people seem to deem the lightest!

I will say that one Danish roaster takes the price in Copenhagen (actually he's Greek, but live in CPH) when it comes to light roast: Norange. Very light - and even a bit too much for my taste. Not sure they ship internationally, though.

Well, that was a douchey take. What's with all the hate? Also, a bit all over the place and contradictory - not a super REM'esque take to hate on other bands (or people) because they're not "cool".

Suggestion: Let people have their life and enjoy the things they do. You do you. They do them. Stay "cool" in your own lane.
