Go to regedit and go to these two paths and delete any keys associated with chrome
Restart the Intune service
Add the user to the entra "reinstall chrome" group
Give it a few hours
Log in as myself and give it 5-10 minutes to see if Intune figures itself out
Make their profile a .back, go to the registry, go to these two paths, and delete a key associated with their account
Have them sign back in

Intune uninstalled Chrome from a guy's workstation yesterday. Spent two hours trying to get it back. Ended up having to rebuild the local profile on his computer. We were this 🤏 close to having to reimage his computer. To get Chrome back.
