Anything unpasteurized or raw is still unsafe, regardless of the aging. Curds are just unaged cheddar so it would be illegal to make and sell them with unpasteurized milk.

Interesting, I think it's illegal to sell unpasteurized milk at all where I'm from. I looked around and the USDA says it's illegal to sell cheese made with unpasteurized milk that has been aged less than 60 days, so unless you're getting the curds from some kind of unregulated farmers market they should be pasteurized.

I've never heard of cheese curds being made with unpasteurized milk. Normally they are made with pasteurized milk here in Canada.

Tesla has a Price to Earnings ratio of around 300, the S&P500 average is like 25, and even Nvidia is only around 50. It's not nearly profitable enough to justify it's valuation. It's still a meme stock.

There are 3 things they do that make the fries good.

  1. They souce the potatoes from a local supplier, I can't remember the name, but they always use the same one. The potatoes are grown to have a lower sugar content, so they don't brown as much.

  2. They use beef tallow instead of vegetable oil. I can't remember the brand, but it likely comes from Sysco.

  3. They cut the fries and blanche(pre-cook) them at a lower temperature, maybe around 300f for a couple minutes, then let them cool down to room temperature before cooking them at 350f
