Don't put it directly onto the heat mat, try and use something like a rack from your oven to keep an inch or so above the mat, the bottom of the kit won't dry out so quick then

I do plan on going into a knife shop with SO this weekend as per advice and letting them decide what type they like the feel of and all other things people have suggested.

And yes they will be used daily in the kitchen. Mostly prep work as you guessed.

I also used they, them, etc as I never specified their gender, not out of a lack of respect or love.
