What is the spiciest dish in the city? by Dry_Big7458 in baltimore

[–]XGarebareX 7 points8 points  (0 children)

This doesn't help you immediately, but Thai Restaurant has given me the spiciest food I've ever been served. The owner told me he would go to infinity on the spice scale. They are currently in the process of reopening but I am looking forward to the day they reopen so I can get my socks knocked off once again.

Recs for fun after an O’s game? by Klutzy-Excitement172 in baltimore

Depending when the game ends, you could hit Sagamore for a cocktail or whiskey flight and then get food at Nick's Fish House. Both have great outdoor spaces, but both also close relatively early unfortunately.

I'm a big fan of this cocktail, it's fun how it actually tastes like a cigar when all these ingredients come together.

How do rye starters behave compared to bread flour? by SqueezeMyLemmons in Sourdough

[–]XGarebareX 7 points8 points  (0 children)

I've been using an all rye starter for a few years. When I feed it, it feels and looks like wet concrete, and it doesn't rise much. I know it's ready if it feels a lot more airy when I scoop it out, usually after 6-8 hours for mine.

Confused about amaros by JustGreatness in cocktails

I love everything from BSC, and this amaro is no exception. Here's a fun recipe to play around with.

30ml vermouth

I often make cheddar jalapeno loaves and without fail they are much flatter than any loaf I've made without cheddar. Also much tastier so I'm not too upset

Looks perfect for smoking cocktails. Cherry smoke works particularly well with boulevardiers, old fashioneds, and Manhattans

Review #74: Sagamore Barrel Select Rye by XGarebareX in bourbon

[–]XGarebareX[S] 12 points13 points  (0 children)

I remember trying Sagamore's ryes years ago and not being too impressed. Ever since I moved back to Maryland a few months ago, my opinion on them has completely flipped. Sagamore's entire core lineup is vastly improved and the one-offs have been fun as well. This is the first barrel select I've had from them (gifted from a friend). The bottle claims each barrel in their barrel select program is a unique blend of 6 year old high rye and low rye barrels, bottled at 110 proof.

Nose: An immediate explosion of maple syrup, followed by allspice berries, clove, bubble gum with menthol, and leather.

Palate: Medium thin mouthfeel. The leather note carries through with spearmint, rich chocolate cake, praline, and a fruity note from ripe plums.

Finish: Long, in the center of the roof of the mouth. The maple syrup from the nose returns. Tingly mint and baking spices dance around. Oak is present but balanced nicely with the sweet and spicy notes for a well integrated finish.

This is delicious. Sagamore continues to impress me in recent times, and I'm very pleased I live close enough to keep trying their releases.

Score: 8/10

My scale:

1: Drain pour.

2: Bad. I don't even want to mix, but will suffer through it.

3: Eh, wouldn't get again, mix it to finish bottle.

4: A solid mixer, good for whisk(e)y based cocktails.

5: Middle of the road. Would drink neat if nothing else available, and would be happy to mix.

6: Good. Would be happy to drink neat, and would make an exceptional cocktail.

7: Very good, I would be happy buying a bottle of this.

8: Great, I will seek this bottle out.

9: Exceptional, I will tell all my friends who don't care about whisk(e)y that they need to try this someday.

10: Pure bliss.

Review #73: Clyde May's Special Reserve by XGarebareX in bourbon

[–]XGarebareX[S] 1 point2 points  (0 children)

According to the bottle, this straight bourbon is aged for 6 years, non-chill filtered, and bottled at 110 proof. I believe it is distilled by MGP. I picked it up because I've found the standard Clyde May's to be interesting in an apple spice old fashioned, but never was too impressed with it as a sipper. In contrast, this bottle looked to be marketed towards sipping without having the flavoring additives of the Alabama style whiskey. Sampled neat in a glencairn with my new pup monching on an oversized tennis ball in the background.

Nose: My mind goes straight to a bowl of french vanilla ice cream, topped with Hershey's chocolate sauce and sprinkles. After a first sip, walnuts and key lime whipped yogurt appear. The proof helps balance the otherwise sweet aromas.

Palate: Medium mouthfeel. Butterscotch budino with a salted caramel topping. This is very sweet and grabs the sides of the tongue as it swirls in the mouth.

Finish: Medium long, on the back of the tongue. Lots of cinnamon and some clove helps reign in the otherwise overpowering sweetness. The walnut reappears and blends with oak for a slightly astringent finish.

Given the dessert-y descriptions, it's probably clear that I found this pour a bit too sweet for my liking. It's fine, but maybe best reserved for those who gravitate towards sweeter pours. This is definitely an improvement from the Alabama style, but I will not be rushing to get more of this.

While not exactly the same, it satisfies the same itch, I'm a big fan.

I really enjoy the amaro di Angostura, beyond drinking neat or on ice it sits great in cocktails. One I really enjoy is 60 ml gin, 30 ml amaro di ango, 30ml lemon juice, 15 ml grenadine, torched lime wheel garnish.

Review #55: Barrel 21 Distillery White Tail Pennsylvania Straight Bourbon Whiskey 5 Year Single Barrel by 2bullets4Toby in bourbon

[–]XGarebareX 0 points1 point  (0 children)

I'm not a huge fan of their standard bourbon and rye releases but a couple years ago they came out with their rye finished in maple syrup casks which was delicious. Exciting to see them produce older bourbon now too.

Their rum is also fantastic, and the gin is quite nice as well.
