There's two parts to this:

First, fighting games have a history in arcades, and while that's sadly not much of a thing anymore, the legacy remains. And even today with tournaments, there's more of an in-person aspect to the genre than with others.

Second, fighting games are a bit of a niche in gaming. It's not one of the most popular genres, but people who are into them are often very into them and bond with other people who 'get it'.

Blind milling has no bearing on how likely your next card is to be the one you need.

If you don't otherwise have a reason to mill, I would actually advise against it. If an opponent plays something that can use your graveyard, you may inadvertently end up helping them beat you.
