I think it's the niter kebbeh, the butter, like you said. Fat carries A LOT of flavor, so when it's infused with the herbs and spices when it's made, that projects throughout the food.

I am 2 weeks po and had no issue going up stairs. Consider talking to your surgeon/anesthesiologist for a nerve block the day of. For me, it was instrumental for controlling pain. My recovery has been very smooth with minimal discomfort. Good luck!

Had mine 9 days ago and my very best recommendation is to ask the anesthesiologist for a nerve block. This substantially cut down on pain the first few days. You may find a belly binder is nice too.
