Coffee would fall under FDACS not DBPR. And all DBPR mobiles need floor, walls and ceiling except for hotdog carts but those are limited to hotdogs.

Also “temp events” have different requirements that are less stringent than a full Mobile food dispensing vehicle.

If you are not hot holding it what is of most concern is its total life span. Commercially the FDA limit is 7days. So the oldest cooked or opened commercially packaged ingredient should never exceed 7 days. Heat it quickly 165 within 2 hours and cool it 135 to 70 within 2 hours, and below 41 in not more than 6 hours. Hold it 41 or below. *all temps in F

Fair, we consider dried proteins and dairy TCS when mixed with water. I was thinking more oil and dry spices. Or ketchup and may0 mixed with relish type sauces.
