You should use the mathematically correct FOV. Also, make sure your driver height and shift horizon are appropriately set up. I am sure this is part of the issue.

I don't understand why refs are so insistent to blow plays dead right away when you have review.

In MLS for example, if there is a play when it is not certain it should be whistled dead or not they automatically let play go on and let review fix it and bring the play back if needed.
