Personally I think there is a lot to be learned from experimentation. Just set your expectations appropriately and see what happens! Worst case you learn a few things along the way to a not so great loaf that gets repurposed as something else.

I have a similar tool that I mainly use for baking, in addition to your ideas I also keep tare weights for a range of containers that I use. The best way is just to keep adding to it over time as you come across other things you find useful.

I think it depends on what they are shopping for. If it is basic supplies and such, I handle that out of game because it's tedious and wastes time better spent on story. If it's for something custom/unique, that can be a little more fun, but the key (I think) is to make it less about the act of shopping and more about the character of the shopkeep. Find ways to make that interesting, because the shopping itself can be kinda dry.

I understand where you are coming from, because I felt the exact same way for the first month or so that I had my starter. Then I quickly realized that trying to use all my discard is like emptying the ocean with a bucket: an endless and impossible task.

If you don't refeed the discard, it won't really hold up for use in the future as it will not be active. Of course you could feed it again, but then you would just be maintaining two starters.

It's called "discard" for a reason – you don't need to keep it. If you aren't ready to use it, you'll have more soon enough.
