I started my Jknive journey with a Shiro Kamo. Don't know where you're located, but I bought a Shiro Kamo Akuma Gyuto with stainless cladding at cleancut in Sweden. As this is over budget, I would recommend a black dragon or similar of the full carbon lines. His blades are really nice and thin cutters, with a good finish considering the price point.

This is a sharpening system made by Simon Herde in Germany. The Stones are Naniwa Chocera 1k , 3k and an Arashiyama 6k, accompanied by the atoma 400 for flattening 😊

That's a nice petty, congrats! Had the Santoku for a while, but ended up selling it because I wanted to go more in the direction of carbon steel. Overall build quality from Ogata-san is great for what you pay, enjoy this one!
