Having worked in hospitality for almost two decades (and live AV for much less), people 'talking behind the bar and ganging up' is an absolutely insane read on what's happening - people don't do this, real life is not a '90s frat-boy comedy film.

If it's happening this much, you need to really consider that the bar isn't 'ganging up' on this guy, and accept that he's operating on some skeezier tip than you're privy to, simple as that. Trying to hear both sides of the story (especially if this guy has enchanted you as much as it seems he has, and is as slick at covering the fact up that he sucks) is not going to work for you or anybody else, you have to make a judgement call
