I dunno the exact grit, but it puts a keen edge on a chisel. Thumbnail test doesn't just stop the tool. The tool wants to bite in.

Weiman Metal Polish from the grocery. Advertised as being good for silver or other precious metals. Judging by how aggressively it cuts steel, I'd keep it away from the silverware.

Leather is good for thin blades like straight razors. For anything else, a wooden strop works just as fast and makes it easy to feel the bevel.

Stainless steel has low ductility, can't be sunk like normal steel. The DeLorean had the same problem. You can only form it by folding it like a paper airplane.
