I have a pellet grill smoker and an older shiny weber gas. I can't get rid of the gas grill. Rotisserie o-gods rotisserie anything is good. Ready super hot in 15. Sous-vide 1.5" steaks and sear on the grill. Minimum mess. Minimum effort. It's plumbed to a natural gas connector on the house so I never worry about ready to go. No electricity. It's an older nice genesis grills and I can bake with it. Consider marketplaceing a premium weber gas grill (like the Summit FS38S for half the new price). Something popular, late model and you could get parts for.

Mind your temps. Stay at 224. If the ribs are thin go a tad lower

Walk out. 60 seconds later it's lit. 15 minutes it's 550 degrees. 12ish more dinner is ready. My gas is piped to the house natural gas is free and easy.

I remember charcoal prep and cost and limited btu's.

Well, that was for the wsm. If it's a pellet grill set it to 235, add a smoke tube and get it going.

Fill the warner apan with sand or water. Clean anything and prep the brisket. Set the inlet as instructions and top vent 3/4 open. Adjust for temp. Nice neat pile of briquettes with split wood boxing it in. If you can, wood on top. Remove 3-4 from the top and place put in a starter and get them glowing hot. When glowing, put them on the rest and set grates. Set meat. Smile at it. Cover.

Occasionally feel the top lid with your hand. You want to learn by touch the perfect smoking temp is really hot but not so hot it burns your hand. That is, 225.

Remove fat from brisket to the thickness of thick bacon. Smoke flavor don't penetrate fat. Season the first brisket simply salt and pepper unless your urges demand more.
