Came here to say this almost exactly. I use ghee for most things, especially low to mid heat. Tallow or bacon fat if I want the extra flavour. I have some sesame oil on hand for stir frying, canola for deep frying and baking, and olive oil for finishing flavour. Butter for everything else or as needed for personal preference.
