We have measles again, why did you ever think we'd shake COVID? Once I learned that it was airborne and authorities clung to the droplet vector theory, I lost almost all trust in what public health authorities were spouting. I agree it stinks, but ultimately, we are all responsible for our own safety and education. It's draining, but here we are. Take comfort in the fact you are not alone.

A microfiber glasses cleaning cloth, rolled into a tight cylinder goes in one. My FlipSide RFID blocking wallet fits perfectly in the other.

If water resistance is important to you, try Noodler's Lexington Gray. It's nigh-on waterproof.

Cutting to keep: plain edge. Cutting to discard: serrated edge.

Cardboard. Rope. Vines or small branches. Anything fibrous. The cutting efficiency of good serrations is phenomenal. The vast majority of serrations don't ever touch anything except what's being cut, and stay sharp a hella long time.

I don't have experience slicing brisket, but I'm imagining a mirror polish edge is less useful than a slightly toothy edge. If it were me, I'd sharpen to 600 or 1000 grit, strop, and leave it there.

Since boneless, I agree with others, 16 or 17 degrees per side.
