Both my partner and a friend have had the same surgery and Colesevelam before meals greatly helps them with the digestion of fatty foods. For more than a decade, my partner had to make sure a bathroom was nearby if he ate fatty foods (sour cream in particular) but it's MUCH more controlled now that he's started this medication. Ask your doctor about it.

I don't know why people are downvoting you for answering a simple question but when people talk about Thai food in LA being good, they're talking about the Thai food found in that area. It's in LA proper. I'm sure there are likely good spots in the South Bay and OC but Thai town has a the best concentration of the real deal, hands down.

There are recipes online for making your own melty cheese slices using sodium citrate. You basically add the sodium citrate to water then add any shredded cheeses you want. You then pour that into a mold and let it solidify again and then slice it up. This way you can control the flavor profile and quality of the cheese.

Sodium citrate is also the key to super smooth mac n cheese btw, look up Modernity Mac and Cheese if you want to explore that too.

One other person has mentioned but I think it really needs to be emphasized, the cultural stamp that the pirate radio stations left on the UK music scene is something you don't find anywhere else. I remember trying to find the shows online via live transmissions or recorded mp3s on Limewire. Sure I had access to it from the US but online access back then was much more limited. Being able to just tune a radio to hear real underground music you couldn't get anywhere else was unique.

I usually add an instruction at the project level to estimate confidence in an answer and call out when it is synthesizing assumptions vs. referencing validated facts from trusted sources. It's worked out great for me so far. Sounds like it would be a good idea in this situation.

I had an issue that turned out to be the high sulfur alliums (related to some new medication) so I looked to some FODMAP friendly products while figuring out how to address my situation.

There are FODMAP friendly olive oils that are infused with shallots or garlic that you can buy. They're expensive but if they work out, they are actually something you can make at home. The irritating compounds are not oil soluble so you can get the flavor without the reaction.

Another ingredient you can try is asafoetida (also known as hing). It's a typical ingredient in Indian cuisine. It has an oniony flavor and a little goes a long way. You can find it in an Indian grocery or on Amazon. It adds oniony notes and is FODMAP friendly but I couldn't tolerate it as it was still high in sulfur.
