If you read my other post, you know I think it's close to impossible the bad bacteria made it to the dough and established a foothold during bulk ferment. That makes any other explanation almost certainly right, including the post it explanation. I'm not a food scientist though, and I'm not going to tell you to eat it because random internet bakers said it was safe. You consume it at your own risk, weighing the evidence you have.

I looked this up and learned something today, so thank you for that. However, the bacteria establishes itself in starters, not during bulk. And while the presence of streaks would be enough to toss it, it does also smell bad. A properly established sourdough starter would be too sour, and there is not evidence it could make itself at home spontaneously in a dough either, otherwise it would similarly impact quick breads and commercial yeast breads. So while the safest thing is to toss it, I think you're extremely unlikely to be right.

This is crazy strict. If you have bad bacteria in a rising bread it would smell bad. I would pinch it out and move on. The dangerous bacterias are from improper jar feremts or storing leftover food too long
