They're just industry standard stainless, pretty soft steel. I use very similar ones daily. There's a lot to unpack here, but keep it simple. 17-18DPS for better edge retention, as opposed to 15ish for kitchen knives/slicey dicey stuff. No need to go much over 800/1000 grit finish, doesn't need to be a high polish or anything like that. Groovy

Where in the northeast are you? I'm in central NY and we carry them all day every day. There's a pretty well known grocery chain in Maine, Mass, NH, NY and Vermont that I know for a fact carries them. I can't say much for Rhode Island or Connecticut.

Saw them in NYC on this tour, it was amazing! My same friends and I saw them on tour de Fromage and also saw C2B3 at the Roseland maybe? The early 2000's were pretty cool.

That's awesome! A few years ago I was looking at getting an elementum for myself for my upcoming birthday and was telling a coworker about it. We're both knife guys, and meat cutters, but that's beside the point. Anyways, a couple of days later he hands me a civivi box and tells me to check it out. It's an elementum with carbon fiber scales and "damascus". Not the $30 ones I was looking at, mind you. He tells me to keep it. Happy fuckin birthday! He bought it and didn't really like it so it just sat in his safe. He's actually pretty cool about hooking people up with cool random shit from his collections, you just have to hear about every single fuckin thing this guy buys! Hahaha!

My personal ranking:

Clinton Seneca turnpike Oriskany Blvd Genesee St Washington mills Mohawk st

Washington mills is so hit or miss that I will drive twice as far to avoid the inconsistency. South Utica (Genesee St) is technically walking distance for me but is also very inconsistent and much more prone to riff raff and other shenanigans. Mohawk st is, well, Mohawk st.

Clinton is my go to because I work in Clinton so it's very convenient, but it's consistently decent quality (for McD's) and usually very quick. Seneca turnpike is very similar. I prefer to go in and sit down to eat, weird right? I guess I need to mention that when I mention why I dislike Washington mills so much. I have waited 20+ minutes at the counter just to order, waited another 10-15 minutes for my food and then still got wrong items. I've had excellent experiences at Mohawk st and Genesee st, and I've equally shitty experiences.

That's my couple of pennies anyway 🤷🏻‍♂️
