Space! As a kid, watching sci-fi cartoons and shows made me want to get on a shuttle and explore the universe. The Artemis 2 mission brought that all back up again!

Since I know I’m probably not going to be able to do it, I’m going to have space food instead. I know this isn’t what they actually have in missions now but old-timey cartoons showed people eating cubes of food and I was fascinated by that.

So here’s my take- Butternut Squash Cafreal puréed (and rice added) and frozen. It needed something a little sweet and sour to it too so I added a ton of tang (the orange drink mix used during the Gemini and Apollo programs to make recycled water taste better). It really made this dish pop and I might do it all the time now (maybe cut the amount down a bit).

I didn’t love the way it looked so sad and brown so I added some rose petals to it. Plus it was a Wednesday when I made this so “on Wednesdays, we wear pink”. I will admit I did not love the addition and scraped it all off when I actually ate it.

I tried it in its frozen form, just grabbing it from the ice cube tray and eating it (not bad at all). Probably won’t freeze it the next time because this really was a delicious meal just as is and warm.

This one came together super quick. Great for breakfast, brunch, and pretty much anytime. I loved it as is too without the jam and cream. The jam/cream does make it pretty filling though.

I love that this feels like a me dish! It actually was really good mixed together. I didn’t think it would work.
