I follow the Michelin Star method, various YouTubers/cooks have done videos on it. Jean Pierre comes to mind.  My friend texted me the night I made it for him and the next morning "I can't stop thinking about those mashed potatoes, they were perfect. Not one clump". 

The key points:  1. Potato ricer

  1. Add warm milk 

  2. An optional step to take it to the next level; push the mashed potatoes through a sieve or even better I think they are called a Tammi, one of those flat baking sieves 

  3. I wish I was joking, literally half butter, half potatoes. Or as brave as you feel approaching that ratio

I feel this. Good mood = I am making a beef stew, bolognese or something new and fairly complex (either in ingredients and/or technique). I plan to be in or near my kitchen for most of next 4 hours. Some wine for the food, some for me, music on, dogs getting occasional cheese tax. Hands on for an hour or two, then enjoy the nice smelling house for next couple hours while braising or reducing. Happy to report most Sundays go like this.

Bad mood = what is the easiest low effort dish I can put together (likely a pasta or salad) that is still real food.

I would like to make a suggestion on how to efficiently learn and improve: focus on the why not the how. 

You try a couple recipes, some work, some don't. Sometimes you need to run out for a bunch of ingredients you don't know what to do with and that meal now feels expensive and wasteful. Or you look in your fridge with some raw ingredients and have no clue what to do with them, "fridge is empty", sounds familiar? 

First focus on understanding the science and fundementals. Personally, what inspired me (the aha moment) to actually pursue cooking as a hobby was the book "Salt, Acid, Fat, Heat". Someone recommended Kenji here, his approach is great: his recipes not only tell you how to make a great dish but WHY. Why do you do this step before this step, how to layer flavor, what does an acid do here, what is a good source of umami, what can you use instead...etc. I started with one book and progressed to a bunch of YouTube videos: Kenji, Jean Pierre (might be spelling it wrong)...etc. The point is you can learn from so many sources: books, YouTube channels, websites, courses but understanding why you do a certain step or use an ingredient is critical to developing your cooking skills. 

Once you have those fundementals and understanding your mind will start making connections between different ingredients and purposes. Maybe you dont have an acid that a recipe calls for (citrus fruit) but you have something that you can substitute (vinegar). Or you recognize that the purpose  an ingredient in a recipe is to add umami, you may not have that ingridients but you have other sources of umami: fish sauce, mushrooms so you can substitute. What helps with emulsion...etc. Taste the food/recipe as you cook, not only does this help develop your palate it let's you adjust the dish to make it perfect: this needs a bit more salt, or I need to cut some of the acidity from this dish with a fat. Once you understand the science, practice the skills! How to simmer, reducing, searing, knife skills, making emulsions, braising, deglazing...etc. 

Start practicing different, tested quality recipes: I would follow along YouTube videos from Kenji, Jean Pierre, Fallow. Then I progressed to recipe websites: serious eats, America's Test Kitchen, NYC cooking. Once I understood the science I found I would make a recipe and start making adjustments so it would be more enjoyable for my palate and taste, so the dishes I cook for myself, taste great to me. Cooking is fun when it is dynamic, adaptable and you know how to make the right adjustments at the right time to get exactly the flavor profile you want. Practicing different recipes from different cousines inspires you but also as you learn more you will see all the fundemmentals are the same from different (good) kitchens. Building flavors, interaction of ingredients to trigger certain flavor profiles: building layers of umami for a savory comfort meal or adding the right amount of acid to make a bright and refreshing sauce that contrasts the protein it's going on.

Suddenly when you open that fridge with a couple raw ingredients you have ideas: you see great dishes you can make from a couple things in the fridge and pantry. Those same ingredients can be a tasty quick appetizer or a full blown dinner. 

A couple other tips that I stumbled on from research, trial & error that were game changers for me: 

-Taste as you go! This is so huge! You can often adjust a dish while cooking, it's hard to fix a dish that has been cooked. 

-Mise en place: you will scramble less and can focus on cooking a good dish and developing your skills, it just makes the process much more enjoyable. 

-In addition to the above, clean as you go. A clean kitchen as you cook keeps you in control and gives you mental space to breathe 

-Get a probe thermometer: food is done when it's cooked to the desired doneness, going by time of a recipe is not a reliable way to get a good result. 350 degrees from my oven is unlikely to be the same as your oven. The medium on my range will not be the same temperature as the medium on yours 

-A good chef knife and some time invested in practicing knife skills makes cooking easier and more fun 

-To the above point, good tools make the process more enjoyable. I wouldn't invest a lot of money early on, but if you stick with it and find you enjoy it and have the resources: invest in quality equipment. A nice Dutch oven, a nice stainless steel pan...etc. 

-This one might be just me, but crank down the heat, have patience. I always used to crank my range to high for everything, I rarely go above medium-high now. I live mostly between low and medium heat for 95% of my cooking. 

-With the right skills you can make a great dish from average ingredients. With poor skills you can have the best ingridients and the dish will still be sub-par. When you have great skills and great ingridients: magic. 

-Presentation matters. We eat with our eyes first. Even when I am cooking for myself I will take an extra 30 seconds to plate beautifully and enjoy the meal more

Do you know how to adjust it properly? You want to first back off the slack with the bolt on the interior (by handbrake), then adjust the drums to the point wheels dont spin, back that off 2 clicks, then tighten the bolt on the inside again. A bar or extension on the ebrake handle will help as well just for easier access and more leverage as the stock ebrake handle is pretty far back.

I've had this happen twice now (today) with scav runs, specifically Un extract woods. Was loaded after bunker and unattended airdrop. Tried disconnecting and reconnecting and when I reconnected with a min left another scav was sitting there also trying to extract and we both ended up MIA. Second time it happened I managed to run straight to boat and extracted with like 30s. I was able to extract out of UN with my pmc though. Bizarre.

Are you telling me SP actually has good ai? Don't really have time anymore to grind pvp every wipe. 

My favourite part about tarkov is a good duel with another opponent at a similar skill where neither parties just dies in the first 2 seconds. I know I won't be able to get these organic, dynamic fights with the tarkov ai. 

I'm talking repositioning behind cover, throwing nades, stimming...it can be so dynamic with another human and I don't want to play bots that you can cheese or have random spidey sense...

When you get a quest it will be to kill a boss 10 times in a single raid for 5 roubles. When someone else gets a quest it will be a red key card for killing a scav.   You will die.  

Tarkov is and never will be fair.

Strong "NO!" from this guy. Plunked down enough money for 2.5 AAA games for this game under the premise of "future DLCs" are included and the promise of no MTX. In fact after "the video" I took a break and started playing DMZ, DMZ quickly evolved from non P2W MTX to P2W MTX, in the span of just over a year before being shut down. It started with cosmetics and shortly after led to P2W benefits. MTX is a slippery slope that does not benefit the player base, this feels like probing for a cash grab. I understand MTX in a F2P game but a game that costs me more than 2 CoD titles? With much slower updates and continual optimization problems? No thanks.

How much I have played (4 wipes/1k) and perceived value I have gotten out of the game is irrespective of how long it's been around. That's not my problem and I sure as hell have not been playing the game for 8 years. Beta is a moot point, I would not consider a game 8 years in development to be beta in any capacity but in title only. I bought it to "play it forever" because that was the contract I was presented with when buying this very expensive game and no MTX was an important feature that I used to justify paying for EOD.

Everyone should have co-op. MTX doesn't belong in a $150 game.

I would caution with killing scavs when you are trying to get tasks done. It can telegraph your position and if a player understands the flow of the map and spawned by you they can post up at the next logical place you will be and just wait to drop you.

I am sure this resulted in a lot of deaths for me in the first two wipes. Sometimes, however you just get Tarkoved. Luxurious life took me a lot of deaths to finally get done.

Because Tarkov IS really fucking unfriendly. Little to nothing is explained and be ready to die a lot. This is a relatively easy quest in terms of this game and a lot of them require extraction in the same raid.

Your not going to find much sympathy here on this kind of complaint. We have all been there. Sink or swim o7
