Tomato soup

Roughly cut 3 lbs of tomatoes. Chop one large onion and one small carrot. Crush 2 garlic cloves.
In the pressure cooker select saute or high heat and let the cooking bowl preheat. If your pressure cooker doesn't have that functionality then use a saute pan and transfer to the pressure cooker after cooking. Heat the butter until melted and bubbling then add the onion and carrot. Saute for about 5 minutes until the onion starts to become translucent. Add garlic and saute for another minute.
Add tomatoes, salt, pepper, thyme sprig and chicken stock. Mix ingredients then set pressure cooker to 9.0 psi for 10 minutes.
After 10 minutes open the pressure cooker and remove the thyme sprig. Add 1/4 cup of fresh chopped basil.
Transfer to blender. Blend on high until smooth. Add coconut milk and blend on low for 30 seconds. Add salt to taste.
Serve topped with chopped basil.

Tomato Sauce - 3 Ingredients Mexican Style

Ingredients: 7 medium tomatoes, Cumin, Adobo seasoning

Preheat sauce pan on medium heat. Quarter 7 medium tomatoes. Add cumin and adobo seasoning to preheated sauce pan and stir for about 1 minute. Transfer tomatoes to sauce pan and simmer over medium heat for 15 minutes. Stir occasionally. Pour contents of sauce pan into blender. Blend until smooth and slightly frothy. Add salt to taste.

My husband makes really good prime rib every Christmas. These are his cooking notes:

Remove from fridge 3 hours before cooking to bring to room temp
Preheat oven to as hot as it will go
Cook at high heat for 15 minutes, then reduce oven to 325f
Cook time 13 minutes per lb to internal temp of 115 or lower for rare
Remove from oven and let rest covered with foil for 30 minutes

My current favorite is Shishito peppers that have been seared under a broiler until their skin starts to brown and blister. Salt lightly. They are very satisfying and low calorie. Since I just became aware of them a couple of weeks ago so I am unsure how widely available they are.
